It is Colorless to light yellow solid, in powder, flake or block form. Shiny, odorless, tasteless. The relative molecular weight is about 50000 ~ 100000. The relative density is 1.3 ~ 1.4. Insoluble in water, but soaked in water, it can absorb 5~10 times of water and expand and soften. If heated, it will be dissolved into colloid and cooled to below 35~40 degrees to become gelatinous. If the solution is boiled for a long time, the properties will change because of decomposition, and no gel will be formed after cooling. Insoluble in ethanol, ether and chloroform, soluble in hot water, glycerol, propylene glycol, acetic acid, salicylic acid, benzoic acid, urea, thiourea, thiocyanate and potassium bromide. The product does not coagulate below 5%, usually forming a gel with 10% to 15% solution. The gelation temperature varies with concentration, coexisting salts and pH value. Viscosity and gel strength vary with molecular weight distribution, and are affected by pH, temperature and electrolyte. This solution, in case of formaldehyde, becomes an irreversible gel which is insoluble in water. This product is easy to absorb moisture and corrupt due to bacteria. Attention should be paid to it during storage. When hydrolyzed, various amino acids can be obtained
